I don't want to do Sweet Spot because it is $874 for a case, which brings the total to around $30 per person. I would rather do something that everyone would be able to participate in without investing too much.
The choices I have narrowed it down to are:
2007 SP Authentic: $619 per 12-box case; 2 By-the-Letter Signatures per box, plus one Dual, Triple or Quad auto or parallel-auto per case. 25 "hits" total. Checklist with autos here. Total cost per person approx. $23.
2007 Bowmans Best: $556 per 4-box case; 9 autos per box, 6 numbered prospect or rookie cards per box. 36 "hits" total, plus numbered parallels. Checklist with autos and prospects here. Total cost per person approx. $20.
2007 Upper Deck Ultimate: approx. $600 per 4-box case; 8 relic (including 1 patch), 4 autos, per box. 48 "hits" total. Checklist with autos and prospects here. Total cost per person approx. $22.
Let's do this one first, see how it goes, get everyone their cards (including base), and then, if there is interest, we can do a break of Sweet Spot.
If there is an equitable way to work out who gets what team, then I'll go for that, but if there is too much difficulty in getting people to accept an alternative to "their" team, then we'll have to go to a random assignment, and then you can trade your team if you would like.

I would vote for Ultimate or Best.
Any idea who all is gonna be involved?
Lots of people are interested, just waiting to hear back. Keep an eye on these comments for an idea of who wants what.
